Asparagus and Carrot Roll sushi is a delicious and healthy variation of sushi roll that can be enjoyed as a light meal or a snack. Here's a recipe for preparing Asparagus and Carrot Roll sushi at home:

Ingredients:

Nori seaweed sheets
Sushi rice
Asparagus
Carrots
Red pepper
Sesame seeds (optional)

Instructions:

Cook sushi rice according to package instructions and let it cool.
Cut the asparagus and carrots into thin strips. Cut the red pepper into thin slices.
Bring a pot of water to a boil and blanch the asparagus for 1-2 minutes, or until tender. Drain and rinse under cold water to stop the cooking process.
Lay a sheet of nori on a sushi mat or a piece of plastic wrap.
Spread a thin layer of sushi rice on top of the nori, leaving a 1-inch border at the top of the nori sheet.
Place the asparagus, carrots and red pepper strips in a line in the center of the rice.
Sprinkle sesame seeds over the fillings.
To roll, lift the edge of the mat or plastic wrap closest to you and roll it over the fillings, pressing gently to shape the roll.
Once the roll is formed, use the mat or plastic wrap to squeeze the roll and make sure it is tightly packed.
Slice the roll into 6-8 pieces.
Enjoy with soy sauce or a dipping sauce of your choice.

Note:

You can also add other ingredients like lettuce, or mayonnaise if you want to give an extra flavor or texture.
You can also use a sharp knife, or a sushi cutter to slice the rolls for a clean cut.
If you find your rice sticking to your hands or the mat, you can wet your hands with water or vinegar to prevent sticking.
You can use carrot or asparagus greens to wrap the sushi roll if you want to give an extra flavor.
