Rogan Josh

Rogan Josh is a traditional Indian dish that is packed with flavor. It is a delicious curry that can be enjoyed with rice, naan, roti, or other sides. Here's how you can make a delicious Rogan Josh curry at home: 


Ingredients: 
- 2 tablespoons vegetable oil 
- 2 medium onions, diced 
- 1 teaspoon garlic, minced 
- 1 teaspoon fresh ginger, minced 
- 2 tablespoons ground coriander 
- 1 tablespoon ground cumin 
- 1 teaspoon ground turmeric 
- 1 teaspoon paprika 
- 2 teaspoons ground cardamom 
- 1 teaspoon garam masala 
- 2 tablespoons tomato paste 
- 1 pound boneless lamb, cubed 
- 2 cups chicken stock 
- 1/2 cup plain yogurt 
- 1 teaspoon salt 
- 1/2 teaspoon freshly ground black pepper 

Instructions:

Heat the oil in a large pot over medium heat.
Add the onions and cook for about 5 minutes, stirring often, until the onions are soft and golden.
Add the garlic and ginger and cook for another minute.
Add the coriander, cumin, turmeric, paprika, cardamom, and garam masala and stir to combine.
Add the tomato paste, lamb, and chicken stock and stir to combine.
Bring to a boil, then reduce the heat to low and simmer for about 45 minutes, stirring occasionally.
Add the yogurt and stir to combine.
Simmer for another 15 minutes, stirring occasionally.
Add the salt and pepper and stir to combine.
Serve with rice, naan, roti, or other sides. Enjoy!
