Ingredients:
Nori seaweed sheets
Sushi rice
Sweet potato
Cilantro or parsley (optional)
Sesame seeds (optional)
Instructions:
Peel and cut a sweet potato into thin strips.
Heat a skillet over medium heat and cook the sweet potato strips for about 2-3 minutes on each side or until they are soft and slightly golden brown.
Cook sushi rice according to package instructions and let it cool.
Lay a sheet of nori on a sushi mat or a piece of plastic wrap.
Spread a thin layer of sushi rice on top of the nori, leaving a 1-inch border at the top of the nori sheet.
Place the sweet potato strips on top of the rice.
